Thanksgiving appetizers served with fall cocktail picks by Sip & Shell

Thanksgiving appetizer ideas that don't compete with dinner

Thanksgiving appetizers have one job and it's a strange one: keep people happy for three hours without ruining their appetite for the meal everyone came for. Put out too much and dinner lands flat. Put out nothing and the kitchen fills with hungry relatives asking whether they can help.

Here's how we thread it.

Less than you think, earlier than you think

Before a big sit-down meal, plan on 3 to 5 bites per person, not the 10 to 12 you'd make for a cocktail party. Two appetizers is the right number. Three if you're feeding more than 20 people or dinner is running late.

Put them out when the first guests arrive and take them away about 45 minutes before you serve. Clearing the appetizers is the signal that dinner is close, and it stops the grazing that flattens everyone's appetite. Our full breakdown of quantities is in how many appetizers per person.

Don't compete with the menu

The mistake is making appetizers that taste like Thanksgiving. Nobody wants a stuffing bite an hour before stuffing. Sage, sweet potato, cranberry, turkey, pumpkin, brown butter — all of it is already on the table at 4 p.m.

Go the other direction. Something bright, acidic, briny or spicy resets the palate instead of previewing dinner. Marinated olives. Pickled vegetables. Citrus and fennel. Shrimp with lemon. Spicy nuts. A sharp cheese with something vinegary next to it.

This is also why a bloody mary works better than a spiced cider before the meal. If you're building a drink station, our bloody mary garnish guide covers the full setup.

The oven is not available

Treat your oven as fully booked from noon onward. Every appetizer has to be no-cook, made the day before, or cooked on the stovetop or in a slow cooker.

No-cook: marinated olives and mozzarella, a cheese board, prosciutto-wrapped melon or pear, shrimp cocktail, crudités with a good dip.

Day-before: any dip, pickled red onions, spiced nuts, cranberry compote for a brie bite you assemble cold.

Stovetop or slow cooker: meatballs, warm spiced nuts, a skillet of baked feta done early and served at room temperature.

If you only make one thing: a bowl of good olives, a bowl of spiced nuts, and a wedge of sharp cheddar with a knife. It takes four minutes and nobody has ever complained about it.

Five that work every year

Marinated olives and mozzarella. Warm the olives gently in olive oil with orange peel and rosemary. Serve with picks so nobody is fishing around in oil.

Prosciutto and pear skewers. Pear is at its best in November. Add a shard of parmesan and a crack of pepper.

Shrimp with lemon. Cold, fast, and the one thing at a heavy meal that feels light.

Baked brie, but small. Instead of a whole wheel that needs a knife and a plate, make individual bites in a mini muffin tin. They're portable and they don't leave a puddle.

A pickle plate. Cornichons, pickled onions, giardiniera, a good mustard. It costs almost nothing, requires zero cooking, and it's the plate that empties.

Give people something to do

Half the appetizer problem on Thanksgiving is really a crowd-management problem. Put the food somewhere that isn't the kitchen. A board on the coffee table, a bowl of nuts by the drinks, olives near wherever people naturally stand. Guests follow food, and moving the food moves the crowd out of the room where you're trying to get a turkey out of an oven.

Skewers help here too, because a bite on a pick can be carried across a room. Anything requiring a plate keeps people anchored to the counter.

The small detail

Thanksgiving is the one holiday where the table gets photographed and the appetizers don't. That's fine, but a seasonal pick costs almost nothing and makes the pre-dinner spread look like part of the same day rather than an afterthought thrown together at 2 p.m.

Our fall picks and pumpkin picks are the two that move in November. Bear picks work if the crowd skews toward kids. For olives and anything briny, plain olive picks do the job without any seasonal commitment, and the mini appetizer forks handle the warm bites that a pick can't.

One thing worth knowing if you're ordering: we ship from the US and orders leave here within 1 to 3 business days, so the week of Thanksgiving is cutting it close. The week before is comfortable.

The short version

Two appetizers, 3 to 5 bites per person, nothing that tastes like the dinner you're about to serve, nothing that needs the oven. Put it away 45 minutes before you eat. Keep it briny and bright, keep it away from the kitchen, and let the meal be the event.
